SUMAKA
•SUMAKA FOOD is a popular food in Antipolo City.
It is combination of suman,mangga,kasoy.the taste of this
classic food is a sweet,sticky in mouth,and delicious.
It is located in the roads of Antipolo Sumulong highway Rizal. Where it is easily seen by those who want to buy it and it is also delicious and is returned by Filipinos and it can also be used as a greeting.
INGREDIENTS
•2 cups Glutinous rice (Malagkit)
•2 cups fresh or 1 canned coconut milk (400 ml)
•banana leaves for wrapping
•water for boiling
•1 cup sugar (brown or white)
STEP BY STEP PROCEDURE OF COOKING SUMAN
1.Soak the glutinous rice (malagkit) in water for 2 to 3 hrs and then drain well
2.Meanwhile, prepare banana leaves by cutting it into 10 by 10 (inches) sheets and trim stiff ends.
Briefly pass the leaves over flames for 10 to 20 seconds. Set aside.
3.In a pot, mix coconut milk, salt, and sugar on medium heat and stir well. Add glutinous rice and cook for 15 minutes. Stir occasionally until liquid is absorbed.
4.Remove from heat and allow to cool. Put 2 tablespoons on banana leaf.
5.Roll leaves tightly. Leave 1 inch on top and bottom side. 6.Fold edges to seal and tie with a string.
7.In a steamer, stack the suman and steam for around 30 minutes to one hour over boiling water. Make sure they are tender before removing them from the steamer.
8.Allow it to cool before unwrapping so that it will firm up.
9.Serve with sugar, sweetened grated coconut, latik or ripe mango.
KASOY
STEP BY STEP PROCEDURE:
1.Preheat oven to 350 degrees. Line a rimmed baking sheet with parchment paper or foil for easy cleanup. Add cashews in a single layer.
2.Roast for 10-15 minutes.
3. Remove from oven and chop or use as desired. Or, store in an airtight container for up to 1 week.
4. a large bowl, combine the cashews, oil and salt and toss to coat.
5.Spread the nuts in a single layer on the prepared baking sheet and bake for 8 to 12 minutes, shaking the pan every 5 minutes to help the nuts cook evenly.
6.When the cashews start to smell nutty and turn golden brown, they're ready!
